Carolina's Surprise

  1. In the bowl of an electric mixer fitted with a whisk, combine sugar and heavy cream.
  2. Add ricotta gradually, whisking until thick and slightly firm.
  3. Add orange zest, and whisk until just blended.
  4. In a large bowl, mix together strawberries, raspberries and blackberies.
  5. Place half of ricotta mixture in the bottom of a large serving bowl.
  6. Top with half of berry mixture and a sprinkling of chocolate shavings.
  7. Add remaining ricotta mixture, and top with remaining fruit and more chocolate shavings.
  8. Cover lightly with plastic wrap, and refrigerate until chilled, about 1 hour.
