Italian Mac & Cheese

  1. Heat oven to 350F.
  2. Spray 3-quart baking dish with no-stick cooking spray; set aside.
  3. Cook pasta according to package directions.
  4. Drain; keep warm.
  5. Meanwhile, melt 4 tablespoons butter in 2-quart heavy saucepan over medium heat until sizzling; add onion.
  6. Cook, stirring occasionally, 2-3 minutes or until onion starts to soften.
  7. Add zucchini and roasted red peppers; cook 2 minutes.
  8. Stir in flour, garlic salt and pepper; continue cooking 1 minute.
  9. Gradually stir in half & half and Italian seasoning.
  10. Bring to a boil; boil 1 minute.
  11. Reduce heat to medium; add cheese.
  12. Cook 1-2 minutes or until cheese is melted.
  13. Pour mixture over pasta; mix well.
  14. Spoon pasta mixture into prepared baking dish.
  15. Melt remaining 1 tablespoon butter in 1-quart saucepan.
  16. Add breadcrumbs; stir until combined.
  17. Sprinkle over pasta mixture.
  18. Bake 15-20 minutes or until hot and bubbly and breadcrumbs are browned.
  19. *Substitute 1 teaspoon dried oregano leaves, 1/2 teaspoon dried basil leaves and 1/2 teaspoon dried thyme leaves.
