Avocado Mousse Salad Recipe
- 2 lrg ripe avocados - (abt 3/4 lb ea)
- 1 can Spam luncheon meat - (7 ounce) cut in chunks Juice of 1 lemon
- 1/2 c. dairy lowfat sour cream
- 1/4 tsp salt Few drops warm pepper sauce
- 1 env unflavored gelatin
- 1/4 c. cool water Lettuce leaves Pitted black olives
- Halve, pit, and peel avocados; cut into chunks.
- Combine avocado, Spam, lemon juice, lowfat sour cream, salt, and pepper sauce in food processor or possibly blender and process till smooth.
- Soften gelatin in cool water; dissolve over boiling water.
- Stir in avocado mix.
- Divide into eight 1/2-c. molds.
- Chill at least 2 hrs.
- To serve unmold onto lettuce-lined salad plates; garnish with black olives, if you like.
- This recipe yields 8 servings.
- Nice to know: You can make this salad in individual molds or possibly in one 4-c. mold.
