Famous Jodeen Sausage (Wyoming Style)
- 1 x paprika heavy dusting
- 1 x salt and black pepper to taste
- 6 each onions finely chopped
- 10 each garlic cloves peeled and minced
- 1 x parsley leaves fresh, finely chopped
- 3 each jalapeno pepper finely chopped
- 1 x cayenne pepper very light dusting
- 8 teaspoons cumin
- 1 x lemon pepper light dusting
- 1 x celery salt light dusting
- 2 tablespoons sage
- 7 dashes liquid smoke
- 3 teaspoons rosemary leaves
- 3 teaspoons thyme
- 5 teaspoons oregano
- 1 x pork or back bacon, end cuts
- Mix 40-50% pork with remaining ingredients.
- Mix thoroughly with hands then cook piece before proceeding further 3.
- Season to taste and package.
