Chocolate Tortoni

  1. WHIP cream, reserve.
  2. Beat egg whites until frothy, then gradually add sugar and beat until stiff peaks form.
  3. Add liqueur and 1/2 cup crushed chocolate wafers.
  4. Fold into whipped cream.
  5. PLACE about 1 Tbsp (15mL) crushed chocolate wafer crumbs in bottom of 1 parfait glass, follow with successive whipped mixture, grated chocolate, orange peel and more of the whipped mixture.
  6. Top with more crumbs, chocolate and peel.
  7. Repeat with remaining 5 parfait glasses.
  8. FREEZE until firm, about 3 hours, or overnight.
  9. Remove from freezer and let stand 15 minutes before serving.
