Eggnog Pound Cake Recipe
- About 2 tbsp. butter, softened
- 1/2 c. sliced almonds
- 1 pkg. yellow cake mix
- 1/8 teaspoon grnd nutmeg
- 2 Large eggs
- 1 1/2 c. purchased eggnog
- 4 tbsp. butter, melted
- 2 tbsp. rum or possibly 1/4 teaspoon rum flavoring
- Generously grease a 10 inch tube or possibly bundt pan with the softened butter.
- Press almonds on sides and bottom of pan.
- Set aside.
- In a large bowl, combine cake mix, nutmeg, Large eggs, eggnog, the melted butter, and rum.
- Using an electric mixer, beat till smooth and creamy (about 4 min at medium speed) or possibly beat for about 450 strokes with a wooden spoon.
- Pour batter into prepared pan.
- Bake in 350 degree oven for 45 to 55 min or possibly till a wooden pick inserted in center comes out clean.
- Let cold in pan for 10 min, then invert cake onto a rack to cold completely.
- Makes 10 to 12 servings.
