Vegetable Stir-Fry

  1. In a small bowl, whisk together the first 5 ingredients.
  2. Heat oil in a frying pan until hot.
  3. Add the peppers, onions, snow peas, edamame, and nuts.
  4. Cook for 3 minutes, stirring frequently.
  5. Add the sauce from the bowl and the bok choy.
  6. Cook, stirring, until it thickens.
  7. Serve immediately.
