Vegetable Stir-Fry
- 1 tablespoon grated ginger
- 1 tablespoon chopped garlic
- 2 tablespoons low sodium teriyaki sauce
- 12 cup vegetable stock
- 1 tablespoon Thai sweet chili sauce
- 1 tablespoon sesame oil
- 12 red pepper, thinly sliced
- 12 yellow peppers or 12 orange bell pepper, thinly sliced
- 3 spring onions, thinly sliced (keep green part separate)
- 1 cup snow pea pods
- 12 cup edamame
- 12 cup slivered almonds or 12 cup cashews
- 2 heads baby bok choy, cut in half
- In a small bowl, whisk together the first 5 ingredients.
- Heat oil in a frying pan until hot.
- Add the peppers, onions, snow peas, edamame, and nuts.
- Cook for 3 minutes, stirring frequently.
- Add the sauce from the bowl and the bok choy.
- Cook, stirring, until it thickens.
- Serve immediately.
