Mock BBQ Chicken
- 2 Chicken thighs
- 1 tsp Salt and pepper
- 1 BBQ style sauce
- 2 tbsp Whole grain mustard
- 2 tbsp Honey
- 4 tbsp Ketchup
- 2 tsp Dashi soy sauce (or normal soy sauce)
- 2 portions Coffee creamer
- Combine the BBQ style sauce ingredients.
- Discard the excess fat or any gristle from the chicken.
- Slice the chicken against grain to avoid shrinkage and cut into bite sizes.
- Season with salt and pepper.
- Heat a frying pan without oil and place the chicken with the skin side down.
- Fry without moving until crispy browned.
- Check now and then to see if it's not burnt.
- Turn over the chicken and fry the other side.
- After both sides are done, reduce the heat to low and cover with a lid to steam.
- After the chicken has cooked through, put the chicken with the skin side down.
- Increase the heat to high and fry the chicken until the oil from the skin has rendered.
- Discard the excess fat from the pan and reduce the heat to low.
- Pour in the sauce ingredients and agitate the pan around to coat the chicken pieces with the sauce.
- Done!
