Shrimp Monterey
- 2 clove minced garlic
- 2 tbsp butter
- 2 lb raw medium shrimp
- 1/2 cup chicken broth
- 2 cup shredded Monterey cheese
- 2 tbsp minced fresh parsley
- In skillet over medium heat, saute garlic in butter for 1 minute.
- Add shrimp and cook for 4-5 minutes or until pink.
- Put shrimp in 11 x 7 greased baking dish and set aside.
- Add broth to skillet and bring to a boil.
- Cook and stir for 5 minutes or until sauce is reduced.
- Pour broth over shrimp and top with cheese and parsley.
- Bake uncovered at 350 for 10 minutes or until cheese is melted.
- Serve over pasta or rice.
