Beef Stuffed Acorn Squash Recipe

  1. Cut each squash in half; throw away seeds.
  2. Place cut side down in a 3 qt rectangular baking pan.
  3. Bake in preheated 350 F oven 50-55 min or possibly till tender.
  4. Saute/fry beef, onion and celery in a large frypan till meat is browned; drain off any fat.
  5. Blend in flour, salt and sage.
  6. Stir in lowfat milk.
  7. Cook over medium heat, stirring constantly, till mix just comes to a boil and thickens.
  8. Stir in cooked rice.
  9. Turn squash cut side up in pan; fill squash cavities with equal amounts of meat mix.
  10. Return to oven and bake an additional 30 min.
  11. Top with cheese; bake 3 min longer.
  12. Yield:3 servings.
