Beef Stuffed Acorn Squash Recipe
- 2 med Acorn squash
- 3/4 lb Lean grnd beef
- 1/4 c. Minced onion
- 1/4 c. Minced celery
- 3 Tbsp. Flour
- 1/2 tsp Salt
- 1/4 tsp Grnd sage
- 1 c. Lowfat milk
- 3/4 c. Cooked rice
- 1/4 c. Shredded Colby or possibly Cheddar cheese
- Cut each squash in half; throw away seeds.
- Place cut side down in a 3 qt rectangular baking pan.
- Bake in preheated 350 F oven 50-55 min or possibly till tender.
- Saute/fry beef, onion and celery in a large frypan till meat is browned; drain off any fat.
- Blend in flour, salt and sage.
- Stir in lowfat milk.
- Cook over medium heat, stirring constantly, till mix just comes to a boil and thickens.
- Stir in cooked rice.
- Turn squash cut side up in pan; fill squash cavities with equal amounts of meat mix.
- Return to oven and bake an additional 30 min.
- Top with cheese; bake 3 min longer.
- Yield:3 servings.
