Peanut Butter Crunch Cookies Recipe

• 1 c. butter flavor shortening
• 2 c. brown sugar
• 1 c. crunchy peanut butter
• 4 egg whites, slightly beaten
• 1 teaspoon vanilla extract
• 2 c. flour
• 1 teaspoon baking soda
• 1/2 teaspoon baking pwdr
• 2 c. Rice Krispies
• 1 1/2 c. minced peanuts
• 1 c. oats (quick)
• 1 c. coconut
• 1 c. chocolate chips

1. Preheat oven to 350 degrees.
2. In large bowl combine shortening, sugar and peanut butter.
3. Beat medium speed.
4. Beat in egg whites and vanilla.
5. In another bowl combine flour, baking soda and baking pwdr.
6. Mix into creamed mix at low speed till blended.
7. Stir in cereal, nuts, oats, coconut and chocolate chips.
8. Drop on ungreased cookie sheet.
9. Bake 8 to 10 min.
10. About 4 dozen cookies.
