Whole Grain Spice Pumpkin Muffins
- 2 1/2 cups pastry flour, whole wheat
- 1/2 cup bran
- 3 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1 teaspoon sea salt optional
- 1/2 cup nuts chopped
- 2 large eggs
- 1/4 cup sunflower oil unrefined
- 1/2 cup honey
- 2 cups pumpkin puree (canned)
- 1 teaspoon orange zest grated
- 1 cup raisins, seedless
- 1/2 cup dates chopped, pitted
- Combine dry ingredients.
- In a separate bowl beat eggs, add oil, honey and pumpkin.
- Combine the mixtures, then add the orange rind, raisins and dates.
- Stir until all dry ingredients are moistened.
- Fill oiled muffin tins 23 full.
- Bake at 375F (190C).
- for 30 minutes for large muffins or 20 minutes for mini-muffins.
- Allow to cool 5 minutes before removing from the pan.
