Bourbon Mashed Sweet Potatoes Recipe

  1. Preheat the oven to 425 degrees.
  2. Lightly rub the sweet potatoes with the extra virgin olive oil.
  3. Place on a foil-lined baking sheet and bake till tender, about 45 min to 1 hour, depending upon their size.
  4. Remove from the oven and let sit till cold sufficient to handle.
  5. Peel the sweet potatoes and transfer the flesh to a large bowl.
  6. Add in the cream, bourbon, brown sugar, molasses, and salt, and beat on high speed with a hand-held mixer till smooth.
  7. Cover to keep hot till ready to serve.
  8. This recipe yields 4 servings.
