Bourbon Mashed Sweet Potatoes Recipe
- 1 3/4 lb sweet potatoes - (to 2)
- 1 tsp extra virgin olive oil
- 1/2 c. heavy cream
- 1/4 c. bourbon whiskey
- 3 Tbsp. light brown sugar - (packed)
- 2 Tbsp. molasses
- 1/8 tsp salt
- Preheat the oven to 425 degrees.
- Lightly rub the sweet potatoes with the extra virgin olive oil.
- Place on a foil-lined baking sheet and bake till tender, about 45 min to 1 hour, depending upon their size.
- Remove from the oven and let sit till cold sufficient to handle.
- Peel the sweet potatoes and transfer the flesh to a large bowl.
- Add in the cream, bourbon, brown sugar, molasses, and salt, and beat on high speed with a hand-held mixer till smooth.
- Cover to keep hot till ready to serve.
- This recipe yields 4 servings.
