Keepa Fruit Cake

  1. Preheat oven to 350F.
  2. Grease pans well, and cover bottom of pan with brown paper (or parchment paper) also greased.
  3. Cream butter and sugar.
  4. Separate eggs.
  5. Beat whites until light and spongy.
  6. Beat yolks until light and lemon-colored.
  7. Sift the cream of tartar together with the flour.
  8. Add yolks to butter and sugar; gradually stir in one-half of flour.
  9. Mix soda with 1/4 teaspoon hot water, dissolve.
  10. Add to cake.
  11. Toss fruit with 2-4 tablespoons flour before the next step.
  12. Stir in other half of flour, whites of eggs, (molasses), lemon juice and rind; lastly spices, fruits, and nuts.
  13. Bake "in moderate oven four and one-half hours," or until done.
  14. You'll probably want to start checking after about 45 minutes, depending on the type of pan you use.
