Cucumber, Cantaloupe, and Squash Salad
- 1 cup plain yogurt
- 1 finely grated lime, zest of
- 1 tablespoon fresh lime juice
- 12 teaspoon coarse salt
- 12 teaspoon ground cumin
- 18 teaspoon fresh ground pepper
- 3 yellow sumer squash, unpeeled (about 1 lb)
- 1 English cucumber, unpeeled
- 1 12 tablespoons unseasoned rice wine vinegar
- 1 teaspoon coarse salt
- 12 large cantaloupe, rind removed, cubed
- Make the dressing: Combvine the yogurt, lime zest and juice, salt, cumin and pepper.
- Cover and refrigerste 20 minutes.
- Make the salad: Using a vegetable peeler or a mandolin, shave squashes and cucumber into wide ribbons, and refrigerate.
- Just before serving, drain cucumbers, and squash ribbons and toss with cantaloupes - drizzle with dressing.
