Cucumber, Cantaloupe, and Squash Salad

  1. Make the dressing: Combvine the yogurt, lime zest and juice, salt, cumin and pepper.
  2. Cover and refrigerste 20 minutes.
  3. Make the salad: Using a vegetable peeler or a mandolin, shave squashes and cucumber into wide ribbons, and refrigerate.
  4. Just before serving, drain cucumbers, and squash ribbons and toss with cantaloupes - drizzle with dressing.
