Chocolate-Mint Sandwich Cookies

  1. Heat oven to 350 degrees F.
  2. Beat cake mix, eggs and oil until blended; roll into 48 (1-inch) balls.
  3. Place, 2 inches apart, on parchment-covered baking sheets.
  4. Bake 8 min.
  5. or until centres are set.
  6. Cool on baking sheets 3 min.
  7. Remove to wire racks; cool completely.
  8. Beat cream cheese, extract and food colouring in large bowl with mixer until blended.
  9. Gradually add sugar, mixing well after each addition.
  10. Spoon into resealable plastic bag.
  11. Cut small piece off one bottom corner of bag; use to pipe about 1 Tbsp.
  12. cream cheese mixture onto bottom side of each of 24 cookies.
  13. Cover with remaining cookies, top sides up.
