Zesty Turkey Soup
- 1 lb ground turkey
- 2 cups celery (sliced)
- 1 cup onion (chopped)
- 2 teaspoons garlic (minced)
- 4 cups hot water
- 1 (10 ounce) can potatoes (diced)
- 2 cups frozen corn
- 1 12 cups small shell pasta (uncooked)
- 4 cups tomato juice
- 2 (10 ounce) cans diced tomatoes with green chilies
- 2 tablespoons sugar
- In large stock pot cook the ground turkey, sliced celery, chopped onions and minced garlic until meat is cooked through.
- Drain.
- Stir in water, potatoes, corn and pasta.
- Bring to a boil.
- Reduce heat; cover and simmer for 10-15 minutes or until pasta is tender.
- Stir in the remaining ingredients and heat through.
