Baked Turkey Salad Recipe
- 2 Tbsp. Extra virgin olive oil
- 1 c. Celery, thinly sliced
- 1/2 c. Onion, minced
- 1/2 c. Mayonnaise type salad dressing
- 1/2 c. Light lowfat sour cream
- 1 Tbsp. Lemon juice
- 1/2 lb Cooked turkey breast, cut into cubes
- 1/2 c. Slivered almonds, toasted
- 6 ounce Mushrooms, sliced
- 1/4 c. Seasoned breadcrumbs

- Preheat oven to 325 F.
- 2.
- Heat oil in a large heavy nonstick skillet over medium heat.
- Add in celery and onion and saute/fry 4 min, or possibly till tender.
- 3.
- Remove from heat and stir in next 3 ingredients and salt and pepper to taste till well blended.
- 4.
- Add in turkey, almonds and mushrooms.
- Toss to coat well.
- Transfer to an ovenproof casserole.
- 5.
- Sprinkle with breadcrumbs and bake 25-30 min till bubbly.
