South Of The Border Stuffed Bell Peppers Recipe
- 1 pound grnd beef
- 1 clove garlic, chopped
- 1 tbsp. chili pwdr
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 1/2 teaspoon jalapeno, minced
- 4 green onions, minced
- 3/4 c. tomato sauce
- 1/2 c. cream style corn
- 1/2 c. bread crumbs
- 6 lg. bell peppers
- 1 lg. tomato, minced
- Cut off tops of bell peppers and place bell peppers in pot of boiling water with salt.
- Cover and boil 5 min.
- Drain.
- In skillet, saute/fry beef, garlic, chili pwdr, sugar, jalapenos, and green onions.
- Drain off grease.
- Add in minced tomato, corn, tomato sauce, and bread crumbs.
- Simmer 4 min.
- Stuff peppers and bake, covered, at 350 degrees for 40 min.
- May uncover last 10 of those min.
