Authentic Sichuan Twice Cooked Pork
- 400 grams Thinly sliced pork chunks
- 1/3 Cabbage
- 5 Green peppers
- 1 Green onion
- 1 clove and 1 small piece each Garlic and ginger
- 1 tsp Seasonings
- 2 tbsp each Tianmainjiang, soy sauce and sake
- 1 tbsp Sugar
- 1 tsp Doubanjiang
- Combine all the seasonings.
- Chop the green onion, garlic and ginger finely.
- Cut the vegetables roughly, rinse and drain well in a colander.
- Mix the pork with 4 tablespoons of plain flour.
- Heat 3 tablespoons of sesame oil in a wok over a high heat.
- Add the chopped vegetables and fry until the aroma is released.
- Turn up the heat to high, add the pork and fry.
- After the pork is nicely browned take out the pork to a plate and set aside.
- Continue to cook over a high heat!

- Add 2 tablespoons of sesame oil and other vegetables and fry about 1 minute.
- Add the pork from Step 4 and the seasonings from Step 1, fry and stir over a high heat!
- After everything is fried and stirred well it is done.
- Transfer onto a serving plate.
- Enjoy.
