Turkey Meatballs
- 1 cup water
- 12 cup chopped dry sun-dried tomato
- 1 12 lbs ground turkey
- 14 cup finely chopped yellow onion
- 1 -2 garlic clove, minced
- 1 large egg, beaten
- 12 cup fresh breadcrumb
- 14 cup milk
- 14 cup chopped parsley
- 14 teaspoon salt
- 12 teaspoon poultry seasoning
- fresh ground pepper
- 1 cup chicken broth
- 2 tablespoons white wine
- 2 tablespoons flour
- salt
- fresh ground pepper
- In a small pan over high heat, bring water to a boil.
- Add in tomatoes; remove pan from heat and let stand 10 minutes; drain and dry.
- Preheat oven to 375.
- In a big bowl mix tomatoes, turkey, onion, garlic, egg, bread crumbs, milk, parsley, salt, poultry seasoning, and pepper.
- Shape into 1 1/2 inch meatballs; place on a lightly oiled or sprayed baking sheet with a rim.
- Bake about 15 minutes, until browned, stirring once.
- Meanwhile, in a saucepan whisk broth and wine with flour.
- Place over med-high heat; bring to a boil.
- Whisk until thickened; season with salt and pepper.
- Add meatballs and juices; simmer until flavors are blended, about 5 minutes.
- Serve over hot cooked rice or noodles.
