Bed Of Green Lentils Recipe
- 1 tsp Extra virgin olive oil
- 1 c. Diced onion
- 2 Tbsp. Minced garlic
- 2 c. Diced carrots
- 4 c. Dry lentils, preferably Le Puy
- 2 sprg fresh thyme
- 1 x Bay leaf
- 1/8 tsp Grnd cloves Salt and pepper
- Heat the oil in a large skillet over medium heat.
- Add in the onion and garlic, saute/fry till tender and translucent/soft.
- Add in the carrot and continue to cook, stirring frequently, till lightly carmelized.
- Add in the lentils, thyme, bay leaf, and cloves, and cover with 1" of water.
- Reduce the heat and simmer for 15-20 min, till tender.
- Add in more water as needed.
- Remove from heat.
- Season to taste and serve immediately
