Crackling Cornbread
- 1 34 cups flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- 34 cup cornmeal
- 4 tablespoons cane syrup (Karo)
- 1 egg
- 1 14 cups buttermilk
- 4 tablespoons melted butter or 4 tablespoons bacon drippings
- Combine flour, salt, baking powder, baking soda, and cornmeal.
- Add the syrup and egg to the dry ingredients.
- Stir in the cracklings.
- Stir in the milk and the melted butter or bacon drippings.
- Beat thoroughly and pour into a greased pan.
- Bake at 350 F for 40 minutes.
- Yield 6 servings.
