Healthier Pumpkin Cookies

  1. Cream sugars and applesauce.
  2. Add egg beaters, pumpkin and lemon rind & juice.
  3. Mix dry ingredients together and mix in with wet ingredients, just until mixed.
  4. Add raisins, nuts, or other add ins.
  5. Drop by tablespoonsful onto baking sheet lined with parchment paper.
  6. Bake at 350 for about 15 minutes.
  7. I also like to add a mixture of craisins and semi sweet chocolate chips instead of the raisins.
