Healthier Pumpkin Cookies
- 23 cup white sugar
- 23 cup brown sugar
- 13 cup unsweetened applesauce
- 12 cup Egg Beaters egg substitute
- 1 teaspoon vanilla
- 1 teaspoon lemon rind
- 1 teaspoon lemon juice
- 1 cup pumpkin
- 1 12 cups all-purpose flour
- 1 cup whole wheat flour
- 2 tablespoons ground flax seeds
- 14 teaspoon salt
- 14 teaspoon ginger
- 4 teaspoons baking powder
- 14 teaspoon allspice
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 cup raisins
- 12 cup nuts, chopped (optional)
- Cream sugars and applesauce.
- Add egg beaters, pumpkin and lemon rind & juice.
- Mix dry ingredients together and mix in with wet ingredients, just until mixed.
- Add raisins, nuts, or other add ins.
- Drop by tablespoonsful onto baking sheet lined with parchment paper.
- Bake at 350 for about 15 minutes.
- I also like to add a mixture of craisins and semi sweet chocolate chips instead of the raisins.
