Broccoli Salad With Walnut Oil Dressing Recipe
- 1 kg brocolli
- 1/2 c. walnuts
- 1 x red capsicum
- 1 x egg yolks
- 1 tsp garlic, crushed
- 1 tsp mustard, whole grain
- 1/2 c. white wine vinegar
- 1 Tbsp. sherry vinegar
- 1 Tbsp. lemon juice
- 1 tsp sugar (caster) salt, pepper
- 1 c. walnut oil
- 1 Tbsp. walnuts
- Cut brocolli into flourets.
- Plunge broccoli into a large pot of boiling water and cook till tender and bright green.
- Drain and run under cool water to cold and preserve colour.
- Drain well.
- Cut capsicum into thisn strips.
- Toss brocolli with capsicum, dressing and walnuts, heap into a salad bowl and serve.
- Dressing:Place all ingredients except walnut oil in a bowl and whisk well.Gradually whisk in walnut oil in a thin stream.
- Dressing should be creamy.
- Add in finely minced walnuts.
