Lo Cal Blender Cheesecake Recipe

  1. Mix crushed graham crackers with the butter.
  2. Press into bottom of a 10 inch pie pan.
  3. Mix water, gelatin, lemon juice and cottage cheese in blender till smooth.
  4. In a large bowl, fold sliced strawberries and whipped topping into the cheese mix.
  5. Pour over prepared crust.
  6. Heat cherry juice and cornstarch in a medium pan till thickened.
  7. Add in the cherries.
  8. Remove from heat and cold.
  9. Add in sweetener.
  10. (This will be tart, if desired a sweeter taste, add in more sweetener.)
  11. Pour over the cheese layer and refrigeratethoroughly.
  12. (For a sweeter cherry taste, you may use sweet cherries instead of tart.)
