AMIEs Polpette di Tonno (Tunaballs)
- 250 grams can tuna in olive oil, drained
- 2 eggs
- 3 slice white bread, soaked in 3 tablespoon milk
- 1 clove garlic, finely chopped
- 1 tbsp finely chopped fresh parsley
- 1/4 cup grated parmesan cheese
- 1 cup breadcrumbs
- 1/4 cup vegetable oil, for frying
- Combine the tuna and bread then add the parsley, parmesan,garlic and eggs.
- Mix to combine.
- Season with salt and pepper.
- Shape tablespoonfuls into firm balls then shape to make a polpette.
- Heat the oil in a large frying pan and fry the polpette in batches for 3-4 minutes, turning, until browned all over and cooked.
- Serve with your choice of side dishes like "mista insalata" (mixed vegetable salad).
- Share and enjoy.
