Rum-Raisin Ice Cream Parfaits

  1. In small bowl, combine raisins, prunes and rum.
  2. Cover and let sit at room temperature for 8 to 24 hours.
  3. To serve, in parfait dish or other serving glass, spoon 3 tablespoons ice cream into bottom.
  4. Add 1 tablespoon raisin-prune mixture, drained or with a bit of rum, as you prefer.
  5. Pack another 3 tablespoons ice cream over fruit.
  6. Add another tablespoon fruit.
  7. Top parfait with 2 tablespoons ice cream.
  8. Repeat with remaining ice cream and raisin-prune mixture and serve.
