Hearty Lamb Pilaf Recipe
- 1 pound grnd lamb
- 2 lg. onions
- 2 cloves garlic
- 3 (10 3/4 ounce.) cans chicken broth
- 2 (28 ounce.) cans whole tomatoes, undrained and quartered
- 2 c. uncooked brown rice
- 1 teaspoon dry whole oregano
- 1 (10 ounce.) pkg. frzn English peas
- 1/2 c. raisins
- 1 (4 ounce.) jar diced pimiento, undrained
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Combine lamb, onion and garlic in large Dutch oven; cook till lamb is browned and tender.
- Stir in chicken broth, tomatoes, rice and oregano; bring to boil.
- Reduce heat and simmer uncovered 40 min.
- Stir mix occasionally.
- Add in remaining ingredients, stirring well.
- Simmer uncovered an additional 40 min, stirring occasionally.
- Yield: 8 servings.
