Vegetarian Bechamel Sauce
- 2 cups Raw Cashews
- 3 cups Hot Water
- 1 teaspoon Kosher Salt
- 1/4 teaspoons Black Or White Pepper
- Nutmeg
- 1/2 cups Flour
- 2 Tablespoons Oil (I Use Olive)
- Soak the cashews in the hot water for a couple minutes.
- Put the nuts and water in a blender and puree.
- Depending on your blender you might have to do smaller batches.
- I use a vita mix and it handles it no problem.
- You may need to add more water as this gets thick.
- Add the oil and flour to a pot as well as the seasonings.
- You want this to get bubbly, add the cashew liquid or milk and stir with a whisk.
- This cooks fast on high/med heat and gets thick.
- You may need to add some more hot water to get to the desired consistency.
- Also taste to make sure the seasonings are to your liking.
- You can add Fettuccine noodles for a great Alfredo with NO cheese
