  1. For the Salad: Combine poached chicken and 1 oz.
  2. of the vinaigrette in a bowl.
  3. Add all remaining ingredients to the bowl, reserving half of the crispy noodles and sesame seeds for topping salad.
  4. Toss gently with hands, and pile high in a chilled salad bowl.
  5. Top with remaining noodles and sesame seeds.
  6. For the Vinaigrette: Combine all ingredients except oils in a bowl.
  7. While whisking, slowly drizzle in the oils.
