Berks County Potato Custard Pie Recipe

  1. Boil the potato and mash fine.
  2. Add in the butter and sugar and stir to a creamy consistency.
  3. Let this mix cold and then add in the beaten egg yolks, the lowfat milk, lemon juice and rind.
  4. Mix together well and then mix in the stiffly beaten egg whites.
  5. Pour into a pie pan lined with crust and bake at 400-F about 25 min.
