Berks County Potato Custard Pie Recipe
- 1 x Med Potato
- 3/4 c. Sugar
- 2 x Egg white
- 1/2 x Lemon, grated rind of
- 1 x pastry
- 2 Tbsp. Butter
- 2 x Egg yolk
- 1/2 x Lemon, juice of
- 1/2 c. Lowfat milk
- Boil the potato and mash fine.
- Add in the butter and sugar and stir to a creamy consistency.
- Let this mix cold and then add in the beaten egg yolks, the lowfat milk, lemon juice and rind.
- Mix together well and then mix in the stiffly beaten egg whites.
- Pour into a pie pan lined with crust and bake at 400-F about 25 min.
