Pressed Cubano Sandwich
- 2 slices Good Bread
- 1/2 teaspoons Yellow Mustard
- 2 slices Ham
- 2 slices Roasted Pork (or Smoked Turkey If You Are Lacking)
- 3 slices Good Dill Pickles
- 2 slices Swiss Cheese, Or If You Dare, Manchego
- 1 teaspoon Butter
- Oil For Pan
- Most people use a panini grill for these sandwiches, but I use a good cast iron pan (or grill pan) weighted down with another cast iron pan.
- Refer to the related link for pictures.
- Heat the cast iron pan on medium low for about 3-5 minutes while you assemble the sandwich.
- Butter the bread, and layer ingredients to taste.
- Put enough olive oil (you can use butter or vegetable oil) in the pan, let oil heat for a minute and gently place the sandwich in the pan.
- Weight down with whatever works for you.
- I use another cast iron pan and my handy tea kettle filled with water.
- Cook low and slow, checking after about 3 minutes.
- Flip and repeat.
