Pressed Cubano Sandwich

  1. Most people use a panini grill for these sandwiches, but I use a good cast iron pan (or grill pan) weighted down with another cast iron pan.
  2. Refer to the related link for pictures.
  3. Heat the cast iron pan on medium low for about 3-5 minutes while you assemble the sandwich.
  4. Butter the bread, and layer ingredients to taste.
  5. Put enough olive oil (you can use butter or vegetable oil) in the pan, let oil heat for a minute and gently place the sandwich in the pan.
  6. Weight down with whatever works for you.
  7. I use another cast iron pan and my handy tea kettle filled with water.
  8. Cook low and slow, checking after about 3 minutes.
  9. Flip and repeat.
