Meatless Lentil Rice Patties Recipe
- 3/4 c. dry lentils
- 1/4 c. brown rice
- 1 slightly beaten egg
- 1/2 c. shredded Swiss cheese
- 1/4 c. minced onion
- 1/4 c. fine dry bread crumbs
- 1/4 c. snipped parsley
- 1/4 c. toasted wheat germ
- Pam non-stick spray
- 1/3 c. minced green pepper
- 1/4 c. minced carrot
- Cook lentils and rice in 3 1/2 c. water, simmer, covered 45-50 min.
- Drain and mash slightly.
- Cold 15 min.
- Stir in egg, cheese, onion, crumbs, parsley and 1/2 tsp.
- salt.
- Shape into 4 patties, 1 inch thick.
- Coat with wheat germ.
- Spray skillet with Pam, cook patties over medium heat 3 min on each side (or possibly bake in 450 degree oven 10 min).
- Cook carrot and pepper in boiling water just till tender.
- Serve each pattie topped with cooked vegetables.
- Makes 4 servings.
