Meatless Lentil Rice Patties Recipe

  1. Cook lentils and rice in 3 1/2 c. water, simmer, covered 45-50 min.
  2. Drain and mash slightly.
  3. Cold 15 min.
  4. Stir in egg, cheese, onion, crumbs, parsley and 1/2 tsp.
  5. salt.
  6. Shape into 4 patties, 1 inch thick.
  7. Coat with wheat germ.
  8. Spray skillet with Pam, cook patties over medium heat 3 min on each side (or possibly bake in 450 degree oven 10 min).
  9. Cook carrot and pepper in boiling water just till tender.
  10. Serve each pattie topped with cooked vegetables.
  11. Makes 4 servings.
