Lemon and Herb Fish Burgers

  1. Place the fish in a food processor and process until well chopped.
  2. Place in a bowl along with onion, herbs, rind, capers, garlic and seasoning.
  3. Mix until well combined.
  4. Divide mixture into 4 and with wet hands, shape mixture into 4 x 10cm round burgers.
  5. Heat oil in a frying pan over medium heat and cook for 4-5 minutes each side, or until golden and cooked through.
  6. Top roll bases with some lettuce, cucumber and a burger.
  7. Drizzle with dressing and top with roll lids.
  8. Serve.
