Lemon and Herb Fish Burgers
- 500g firm white fish fillets, roughly chopped King Sooper's 1 lb For $7.99 thru 02/09
- 1/2 red onion, finely chopped
- 2 tablespoons finely chopped Italian parsley
- 1 tablespoon finely chopped dill
- 1 tablespoon grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- 2 teaspoons capers, finely chopped
- 1 clove garlic, crushed
- saltand pepper, to taste
- 1 tablespoon oil
- 1 Turkish rolls, split and toasted
- mixed lettuce leaves, to serve
- cucumber ribbons, to serve
- 1/3 cup KRAFT* Thousand Island Dressing
- Place the fish in a food processor and process until well chopped.
- Place in a bowl along with onion, herbs, rind, capers, garlic and seasoning.
- Mix until well combined.
- Divide mixture into 4 and with wet hands, shape mixture into 4 x 10cm round burgers.
- Heat oil in a frying pan over medium heat and cook for 4-5 minutes each side, or until golden and cooked through.
- Top roll bases with some lettuce, cucumber and a burger.
- Drizzle with dressing and top with roll lids.
- Serve.
