Zucchini Quiche
- 4 cups zucchini, grated
- 1 cup onions, chopped
- 1/4 cup parsley
- 1/4 tsp. oregano
- 1/2 tsp. garlic salt
- 2 eggs
- 1/4 tsp. basil
- 1/4 cup margarine
- 1 tsp. salt
- 1/2 tsp. pepper
- 8 oz. shredded Munster
- Mozzerella cheese
- 1 can crescent rolls
- Saute zucchini and onions in margarine for 10 minutes.
- Stir in spices.
- Combine eggs and cheese and add to mixture.
- Separate crescent rolls and line in ungreased pie pan.
- Spread mustard on rolls.
- Pour vegetable mixture in pan and bake for 20 minutes at 375F or until center sets.
