Plantain & Pepper Quesadilla Special

  1. Heat 1 Tbsp.
  2. oil in large skillet.
  3. Add plantains; cook 5 min.
  4. or until golden brown on both sides, turning after 3 min.
  5. Set aside.
  6. Beat eggs in pie plate.
  7. Heat remaining 1 Tbsp.
  8. of the remaining oil in large skillet.
  9. Dip 2 tortillas, 1 at a time, in egg.
  10. Add to skillet; cook 2 min.
  11. Turn.
  12. Top half of each tortilla with 1/4 cup cheese and 1/6 of each of the vegetables; fold in half.
  13. Cook 2 min.
  14. or until cheese is melted and bottoms of quesadillas are golden brown.
  15. Repeat with remaining tortillas and filling.
  16. Serve topped with sour cream.
