Carrot Soup
- 1 pinch salt
- 4 lbs chopped carrots
- 2 cups chicken or 2 cups vegetable broth
- 2 cups water
- 14 cup defatted peanut flour
- 1 tablespoon chopped garlic
- 2 tablespoons oil
- Wash, peel, coarsly chop carrots.
- Coarsly chop onion.
- Saute onion in oil.
- When onion is translucent, add carrots, broth, and garlic.
- Bring to a boil.
- Turn heat to simmer, and cook until carrots are soft enough to puree.
- Add peanut butter, then either transfer soup to blender or use stick blender to puree everything together.
- Season with Siracha, salt and pepper, mint, basil, maple syrup, or other seasonings to taste.
