Spice Layer Cake(Indonesian Specuke)
- 4 cubes butter, softened
- 1 cube margarine, softened
- 10 eggs, separated
- 4 c. powdered sugar
- 2 c. flour
- 8 tsp. cinnamon
- 4 tsp. cloves
- 4 tsp. nutmeg
- 3 tsp. cardamom
- Whip butter and margarine until smooth.
- Add yolks and whip. Add powdered sugar and whip.
- Whip whites until stiff in another bowl.
- Add flour to mix and fold in whites just until mixed.
- Put more than half in another bowl to remain white.
- Add spices to smaller half.
- Grease and flour 2 round pans.
- Spread 2 tablespoons of brown batter and bake 5 to 10 minutes at 250u0b0.
- Immediately spread 1 to 2 tablespoons of white batter and broil with door open until light brown.
- Continue, alternating colors, broiling and spreading immediately.
- Do one pan at a time if you can't alternate the two.
- Cool on rack.
- Slice off edges.
- Store in foil.
- Cut in wedges.
