Mozzarella & Rice Salad
- 2 cups instant brown rice, cooked, cooled
- 2 cups broccoli florets
- 1 can (15 oz.) chickpeas (garbanzo beans), drained, rinsed
- 1 cup sliced carrots
- 1 can (5 oz.) sliced water chestnuts, drained
- 4 oz. KRAFT Low-Moisture Part-Skim Mozzarella Cheese, cubed
- 3/4 cup KRAFT Italian Pesto Dressing
- Place all ingredients except dressing in large bowl; mix lightly.
- Add dressing; toss to coat.
