Watermelon Berry Sorbet
- 1 cup water
- 1/2 cup sugar
- 2 cup cut up seeded watermelon
- 2 cup raspberries, strawberries, and/or blueberries
- 1 tbsp snipped fresh mint
- For syrup: In a medium sauce pan, combine the water and sugar.
- Bring to boiling, stirring often.
- Boil gently, uncovered, for 2 minutes.
- Cool slightly.
- In a blender or food processor, combine watermelon and berries.
- (If using food processor, process only half the ingredients at a time).
- Cover and blend or process for 30 seconds.
- Add warm syrup; cover and blend or process until nearly smooth.
- Transfer to a 13x 9 x 2 inch freezer proof container.
- Cover and freeze about 1 1/2 hours or until nearly firm.
- Break up frozen mixture with a fork.
- Cover and freeze for at least 1 hour.
- If necessary, let stand at room temperature for 20 minutes before serving.
- To serve, break up frozen mixture with a fork.
- Spoon into dessert dishes.
- If desired, top with additional berries and mint sprigs.
