Watermelon Berry Sorbet

  1. For syrup: In a medium sauce pan, combine the water and sugar.
  2. Bring to boiling, stirring often.
  3. Boil gently, uncovered, for 2 minutes.
  4. Cool slightly.
  5. In a blender or food processor, combine watermelon and berries.
  6. (If using food processor, process only half the ingredients at a time).
  7. Cover and blend or process for 30 seconds.
  8. Add warm syrup; cover and blend or process until nearly smooth.
  9. Transfer to a 13x 9 x 2 inch freezer proof container.
  10. Cover and freeze about 1 1/2 hours or until nearly firm.
  11. Break up frozen mixture with a fork.
  12. Cover and freeze for at least 1 hour.
  13. If necessary, let stand at room temperature for 20 minutes before serving.
  14. To serve, break up frozen mixture with a fork.
  15. Spoon into dessert dishes.
  16. If desired, top with additional berries and mint sprigs.
