Jerk Chicken Wrap
- 4 whole Soft Wheat Tortilla Shells
- 1/4 heads Lettuce, Torn Into Sandwich-sized Pieces
- 2 pieces Leftover Jerk Chicken Breast, Chilled And Shredded
- 2 Tablespoons Spiced Rum Sauce (ingredients Below)
- 2 Tablespoons Mango Salsa (ingredients Below)
- 1 container Vanilla Yogurt, 6-8 Ounce Tub
- 2 Tablespoons Your Favorite Spiced Rum
- 1 Tablespoon Vanilla Extract
- 1 Tablespoon Brown Sugar
- 1 whole Mango, Peeled And Diced
- 13 cups Red Onion, Diced
- 1 Tablespoon Lime Juice
- 13 cups Chopped Cilantro Or Parsley
- Salt And Pepper, to taste
- To make Spiced Rum Sauce, combine all of those listed ingredients (the yogurt, rum, extract, and sugar).
- Let sit in the refrigerator for an hour or longer to dissolve sugar and marinate a little.
- Meanwhile, to make the mango salsa, combine the listed ingredients.
- Once these are complete, it is now time to assemble!

- Take the tortillas and slather on the rum sauce.

- Layer on a couple of lettuce slices with some shredded chicken on top of that.
- 3.
- Finally, dollop on a couple of spoonfuls of mango salsa.
- Roll up, and enjoy!
