Easy Tasty Creamy Potato Soup

• 1 tablespoon butter
• 1 stalk celery, diced
• 3 long green onions, diced
• 1 tablespoon red bell pepper, minced
• 1 small carrot, shredded
• 2 cups chicken broth, low-sodium
• 4 cups mashed potatoes
• 12 cup sour cream, room temperature
• 14 teaspoon ground black pepper

1. In a large saucepan, melt the butter over medium heat.
2. Add the celery, green onions, bell pepper, and carrots.
3. Saute until vegetables are tender.
4. Add the chicken broth, mashed potatoes, sour cream, and black pepper.
5. Stir until everything is well blended.
6. Cook over medium heat until heated through.
