Sparkling Berry Sorbet

  1. Stir boiling water into combined gelatin and sugar in large bowl at least 2 minutes until completely dissolved.
  2. Stir in club soda.
  3. Pour into 9-inch square pan; cover.
  4. Freeze about 1-1/2 hours or until ice crystals form 1 inch around edges.
  5. Spoon into blender container; cover.
  6. Blend on high speed 30 seconds or until smooth.
  7. Return to pan; cover.
  8. Freeze 6 hours or overnight until firm.
  9. Scoop into dessert dishes.
  10. Store leftover sorbet in freezer.
