Lemon Chicken

  1. Saute chicken, onion and garlic in butter until chicken is lightly browned, about 5 minutes.
  2. Stir in cornstarch and cook 1 minute.
  3. Add broth, carrot, lemon juice, rind and salt.
  4. Bring to a full boil.
  5. Stir in pea pods, parsley and rice.
  6. Cover and remove from heat; let stand 5 minutes.
  7. Fluff with a fork.
  8. Makes 4 servings.
