Bacon and Nacho Cheese Hot Dogs
- 8 hot dogs (all beef franks)
- 8 slices bacon (not thick cut)
- 2 tsp AP BBQ & Steak Rub, recipe attached below
- 8 hot dog buns
- 1 cup lightly crushed corn chips (plain or flavored, frito chili cheese corn chips adds a lot of flavor)
- 1/2 cup sliced pickled jalapenos
- 1 & 1/2 cup nacho cheese sauce (homemade or store bought) .
- Wrap each hot dog with one strip of bacon and secure the ends with toothpicks.
- Season with AP BBQ & Steak Rub and refrigerate until needed.
- Make the Easy Nacho Cheese Sauce (recipe in my profile).
- Cover with a lid and turn to "very low heat" and keep warm.
- Set up your grill with a 3 Zone Fire with a drip pan in the front.
- Place bacon wrapped hot dogs on the grill over the drip pan.
- Add a handful of what wood chips directly to the fire and cook at 350AF for 20 to 30 minutes or longer.
- Continue cooking until the bacon is crispy, just keep an eye on them.
- Top hot dogs with nacho cheese sauce and a few jalapeno slices and some lightly crushed corn chips.
