Cheaters guide to Garlic'd sausage casserole in a plum sauce with mini jackets and seasonal veg.
- 6 small potatoes
- 1/2 stick brocoli
- 4 carrots, chopped roughly
- 1 clove garlic, minced
- 8 sausages
- 4 plums, whole
- 1 packet of casserole mix or your own mix
- 1 tbsp olive oil
- Wash, pierce and wrap each potato in tin foil.
- Place in the oven at 220c, medium rack.
- Pour the oil onto a baking tray, roll and cover all the uncooked sausages in this and place in the oven, still at 220c, with the potatoes.
- Make your own cassarole sauce mix, or cheat like me with a packet.
- Mix as according to instructions and leave on the side.
- Wash and roughly chop all veg.
- Peel and mince garlic clove.
- Place all together in a cassarole dish.
- Add the whole plums, de-stalked.
- Pour the cassarole mixture on top and place in the oven.
- After 15 - 20 minutes, your sausages should be cooked.
- Roughly chop and add to the cassarole.
- Bake for an hour.
- Remove the whole plum from the cassaerole, if not disintegrated.
- Serve with buttered mini jacket potatoes.
