Grandma Gladys' Pancakes Recipe
- 2 c. all purpose flour
- 2 Large eggs, separated
- 2 tbsp. sugar
- 1 tbsp. baking pwdr
- 1 teaspoon salt
- Touch of vanilla
- 1 1/2 to 2 c. lowfat milk
- 2 tbsp. oil
- Heat griddle or possibly pan to medium high heat, spray with non-stick cooking spray.
- Put flour and other dry ingredients in large bowl and make a center "bowl" to hold egg yolks and vanilla.
- With a wooden spoon, slowly go in circles so liquid picks up dry from sides, add in a little lowfat milk at a time.
- Add in oil.
- Beat egg whites till they are stiff, and gently fold into mix.
- Test griddle, cakes will rise immediately if warm sufficient.
- Cook and enjoy the lightest and fluffiest pancakes ever!
