Red Bliss Potatoes With Blue Cheese, Bacon and Chives
- 1 12 lbs Red Bliss potatoes
- 3 tablespoons coarse salt
- 1 12 ounces danish blue cheese, plus more for garnish
- 12 cup buttermilk
- 1 teaspoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh chives, minced, plus more for garnish
- 8 slices bacon, strips cooked until crisp and crumbled
- Place potatoes and the salt in a medium saucepan.
- Cover with water, and bring to a simmer.
- Cook until a knife pierces through potatoes with little resisitance, about 12 minutes.
- Drain, and let cool slightly.
