Junior League - Ancho Bock Beer Smashed Potatoes

  1. Combine peppers with enough water to cover.
  2. Let soften, drain.
  3. Chop chilies, discarding seeds, stem, membranes.
  4. Process chiles with 1/2 cup water in blender until pureed, adding water as needed.
  5. Combine potatoes with enough water to cover in a saucepan.
  6. Bring to boil, boil until tender, drain.
  7. Beat potatoes until smooth.
  8. Add butter , heavy cream, beer, salt, ancho paste; beating constantly until creamy.
  9. Add salt if needed.
